Aalu Sabzi Aur Puri Ka Tadka

- 1/2 tsp (2g) lal mirch powder (red chili powder)
- Salt, to taste
- 2 tbsp (30g) vegetable oil
- 2 tbsp (30g) hara dhaniya (fresh coriander), chopped (optional)
_Instructions:_
1. Heat oil in a pan over medium heat.
2. Add jeera and saunf, and let them sizzle for a few seconds.
3. Add chopped pyaaz and hari mirch, and sauté until the onions are translucent.
4. Add diced aaloo, dhaniya powder, garam masala powder, haldi powder, lal mirch powder, and salt. Mix well.
5. Cook for 15-20 minutes or until the aaloo are cooked through and the sabzi has thickened.
6. Garnish with chopped hara dhaniya, if desired.
*Puri Recipe:*

_Ingredients:_
- 2 cups (250g) atta (whole wheat flour)
- 1/2 tsp (2g) namak (salt)
- 1/4 tsp (1g) baking powder
- 1/4 tsp (1g) baking soda
- 1/4 cup (60g) ghee or oil
- 1/2 cup (120ml) lukewarm paani (water)
_Instructions:_
1. In a large mixing bowl, combine atta, namak, baking powder, and baking soda.
2. Add ghee or oil and mix until the dough comes together.
3. Gradually add lukewarm paani and knead the dough for 5-7 minutes, until it becomes smooth and elastic.
4. Cover the dough with a damp cloth and let it rest for 30 minutes.
5. Divide the dough into 6-8 equal portions.
6. Roll out each portion into a thin circle, about 6-7 inches (15-18 cm) in diameter.
7. Heat oil in a deep frying pan over medium-high heat.
8. Fry the puris until they are golden brown and puffed up.
9. Drain the puris on paper towels and serve hot with aalu ki sabzi.
